NORDIC FOOD IS:
PURE - The Nordic region has an extremely clean environment and strict regulations help to keep it that way. The endless forests supply an abundance of different mushrooms and the cold waters give shellfish and fish a firm flesh, full of flavour.
SIMPLE - Thanks to the superb quality of the produce and the distinct seasons, only simple cooking and preservation techniques, along with herbs and spices, are needed to enhance the original flavours and textures of the meat, fish, vegetables, fruits and berries.
HEALTHY - The relatively cold climate with long days and light nights means that fruit, vegetables, grains and berries mature slowly. It gives the produce a special character and a very concentrated aroma, resulting in a higher content of vitamins and minerals. The Nordic diet is, in general, very high in dietary fiber and low in fat.
