WILD MEAT: Lean, light and different

Sweden has the toughest animal welfare laws in the world, and our reindeer and moose meat is sourced from Lapland, the region in the very north. Free to roam the vast mountain areas, a reindeer’s diet consists mainly of lichens and spring water, whilst moose eat whatever the endless forests supply: pine leaves, berries and mosses. Their diet, in combination with a life free from stress, gives light and meat with a fantastic flavour, tender beyond comparison and full of antioxidants. Moreover, reindeer meat consists of an average of 3% fat, of which the majority is healthy Omega 3, which makes it the leanest meat around.

SMOKED MUSSELS: wild and ethical

The essential fatty acids Omega 3 and Omega 6 make fish and seafoods extraordinarily healthy, and water borne produce from the clean waters of the Nordic Region have few equals when it comes to nutritional value. Our small and lightly smoked mussels are ethically sourced from the famous Danish Limfjord. Having been allowed a slow growth in cold water, these tasty crustaceans come from wild yet sustainable stock. They come preserved in rapeseed oil and are incredibly versatile – we love them fried on toast, in pastas, salads and soups. We have sourced them from the outstanding producer Bornholms, established in 1915 and the Danish royal supplier of premium fish and seafoods. In stores from December-January.

THIN CRISPBREAD: crunchy fibers

There is a lot of great tasting healthy breads from the Nordic Region, and the one we offer is no doubt one of the best! Hand-made from wholegrain rye and wheat flour, it contains a record high 19% dietary fiber and no added fat or sugar. The bread is baked by the famous baker Joakim Yngdén, according to his great grandmother’s traditional recipe and baking technique. This extraordinarily thin crispbread is great on your cheese board, goose liver and fresh cherries; with pates or plain as a very healthy snack.

MATURED SWEDISH CHEESE

The Nordic Region has an extensive cheese-making tradition, and the three most popular ones are in our opinion also the three best. Our cheeses have been matured for 18 months under careful supervision by Sweden’s finest affineaurs, Falbygden. SVECIA (28% fat): Being one of the few Nordic cheeses that hold "Protected Designation of Origin", Svecia is the oldest Swedish cheese, and was first developed in the 12th Century. Rustic, salty and different, we like Svecia best on its own, with a thin crispbread and a glass of full-bodied red. PRÄST (31% fat): First developed in the 15th Century, Präst is powerful, yet creamy. It is lovely paired with rye bread, but also grated over seafood pasta or in a gratin. GREVÉ (28% fat): Developed in the 1960s, Grevé has similarities with Emmental, but with more character as well as a harmonic, lingering, after taste. Sweet and nutty, we love it on the cheese board, melted in potato mash or on a toast, topped with a slice of cucumber.

FINE RAPESEED OIL: friendly fats

Nordic rapeseed oil differs from the British both in color and character. The mineral rich soil and light Nordic summers gives our organically produced oil a remarkable yellow colour, flowery aroma and soft, nutty palate. It’s not just that it has an amazing flavour and colour ‑ rapeseed has also the lowest level of saturated fats of all vegetarian oils, is rich in antioxidants and vitamins and can help to lower the bad cholesterol. (It is far superior to olive oil, containing ten times the amount of Omega 3). Our organic oil is a perfect counterpart to fine olive oils, giving dishes and salad dressings a unique taste. The fourth generation rapeseed farmer Gunnar Nilsson, who has won multiple awards and supplies the region’s best restaurants, produces it.

ROSEHIP PRESERVE: queen of superfoods

Made from wild growing berries, our preserves are sourced from the award-winning Ölands Örtagård – a family run business dating back to the 18th Century. Rosehip has long been appreciated for its sweet yet fresh taste. It is one of nature’s highest plant sources of iron, vitamins and essential fatty acids, and used as a natural remedy to cure colds, headaches and inflammations. The vitamin C content is astonishingly ten times the amount found in the ”superfood” goji berry and twenty times the amount found in oranges! We love it on toast, with matured cheeses, roast chicken or duck.

WILD BLUEBERRY PRESERVE: king of antioxidants

Blueberries, and in particular the wild ones that go into our preserve, are extremely rich in vitamins. They contain more of the powerful antioxidant anthocyanin than any other natural product; three times the amount found in the second best alternatives – tea and red wine. Our preserve has a pure flavour with a hint of fresh spearmint, and goes particularly well with goats’ cheese, lamb and wild meats.
